ORIGINS OF OUR SIGNATURE DISH – CHONG QING GRILLED FISH
Legend has it, Zhuge Liang, a premier politician and strategist who lived during the Three Kingdoms period 1700 years ago loved this dish so much, he introduced it as an Imperial Cuisine making this dish a culinary walk through history.
THE DISH
The preparation of our Signature Dish requires the use of dried chilis and Sichuan pepper. The Sichuan pepper produces a weird numbing effect on the lips and tongue. The spiciness, freshness and fragrant characteristics meld with the different flavours to entice the varied palates of our customers.. Along with the fragrant aromas, one can taste the crispy and slightly charred fish skin as well as the freshness and sweetness of the firm white fish meat…… Even those who don’t appreciate spicy food would find it hard to resist tucking in. With a hearth of charcoal simmering the broth, the flavors are infused into the fish and the aromas permeate the air, further enhancing the dining experience.
